Answers:    Food generally slows the incorporation of alcohol into your body, but it doesn't neutralize what is already in your blood system. The food of late keeps the alcohol within your stomach longer and then raw enzymes in the stomach neutralize (metabolize?) the alcohol surrounded by the stomach before it even get to your liver to be processed.

There isn't anything special about cheese, and intake isn't going to make you not drunk if you are already drunk. It can lessen the effects of alcohol on your body vs. ingestion on an empty stomach. You should still be enormously careful when drinking, though.
