The only section of your taste buds contained by your mouth is bitter, sweet, salty, and sour. Without your sense of smell, consumption would be preeeetttttty boring. If your nose is stopped up, later air from your mouth cannot convey odors from your mouth to your nose.
Yes it would be a great experiment. You rely on your sense of smell for closely of your taste.
