A interrogate more or less stuttering...........?

Do people who stutter know they are doing so? In other words, are they fully aware of how they nouns, how long they are stuck on a sound, or how long they are unqualified to vocalize? I just come across a new character at work that stutters and trying to understand the condition more surrounded by order to know him and/or his needs, if he have any. I have never particular a person who stutters, even slightly. This is latest to me. Should I just consent to him work through speech or is it acceptable to finish a thought or influence "Take your time" or anything like that. He is a smart guy and pleasant to work beside.
